I'm not going to sit here and write this out like a deaf german composer would in the 18th century. This is guacamole, a simple dish. However, it's the little things make the difference between a good and a great one.
Step 1: Start by opening, pealing and cutting your ripe avocados into medium chunks.
Step 2: Finely chop the tomatoes, cilantro and jalapeños.
Step 3: Add all the ingredients into a mixing bowl and coarse with a fork. It's important not to crush it all too much, as you then loose the texture of your guacamole.
Step 4: Add in your salt to taste.
Step 5: When the all the ingredients are starting to form uniformly, add a squeeze of lemon / lime...or two.
Tips:
Keep tasting as you go. It's important for your guacamole not to be bland and boring, keep adding zing until you can no more.
Serve with nacho chips, carrots, peppers... whatever you fancy. This is a mere vehicle for the elixir you have just created. Enjoy.
