The key skill to master this dish is the boil. You will have to boil the the pulpo and the potatoes. When you get your pulpo legs, firstly try and get them fresh and secondly ask the shop assistant how long these have been cooked previously. You don't want your pulpo to be chewy.
Step 1: Boil water and add salt. Add the pulpo and cook for 5-10 minutes, this depends on how long they have been cooked when you get them. Stir and prob them you can feel the texture you want.
Step 2: Drain and set aside to cool down.
Step 3: Boil and salt water. Add the potatoes and cook for 11-13 minutes.
Step 4: Drain, and chop into chunky slices.
Step 5: Create a base of rucola, cherry tomatoes and celeri. These ingredients combine to give contrast to the flavours and textures. Rucola will give you spice, celeri crunch and cherry tomatoes sweetness.
Step 6: Add the potatoes onto the salad base. On top of that, add the pulpo. Sprinkle with paprika and salt to taste.
